INGREDIENTS:
Homemade Blackened Seasoning:
Simply mix together:
1 tsp - Onion Powder
1 Tbsp - Garlic Powder
1 Tbsp - Paprika
1 tsp - Dried Oregano
1 tsp - Dried Thyme
1 tsp - Fresh-cracked Pepper
1/4 to 1 tsp - Cayenne (depending on how spicy you like it)
Salmon w/ Cajun Garlic Butter:
1/4 cup - Garlic Gloves, chopped
2 Tbsp - Avocado Oil
1 tsp - Sea Salt
2 Tbsp - Homemade Blackened Seasoning (above)
3x - 8oz Salmon Filets, skinless
8 oz - Good-quality Unsalted Butter
2 Tbsp - Slap Ya Mama Cajun Seasoning
DIRECTIONS:
Chop your garlic and set aside. Warm up a cast iron pan on high heat with the avocado oil. Meanwhile, evenly coast all sides of the salmon with the sea salt and a heavy coat of the blackened seasoning.
Once the pan is smoking hot, sear the fish for 3 to 4 minutes on each side. Set the fish aside on a plate, and drain the oil from the pan.
Place the pan back on the stove. Turn the heat down to medium-low, and add the butter, chopped garlic, and cajun seasoning. Stir until the butter is melted, then add your fish back to the pan. Use a spoon to baste the top of the fish with the cajun butter for 5 minutes. You can serve this dish right out of the pan, or plate it up with some cauli-rice or a side dish of your choice.
