5-Ingredient Stuffed Sausage Meatballs

(Note: Macros based on serving size of 3 meatballs (1/4 of the total batch!) and 6oz of zucchini noodles.
INGREDIENTS:
1 lb. - Ground Italian Sausage meat (Mild or Spicy)
48 oz. - Marinara (No Sugar Added)
8 oz. Container - Mini Mozzarella Balls (‘Ciliegine’)
1 pkg - Zucchini Noodles (Or other low-carb noodle of your choice)
2 TBS - Parmesan Cheese (Shaved or Grated)
DIRECTIONS:
Drain the brine from the mozzarella, and spread the cheese onto a plate lined with paper towels.
Completely dry off the mozzarella.
Form the meatballs, one by one.
Take roughly 1.25 oz of meat, and flatten in the palm of your hand.
Place one ball of mozzarella in the center, and carefully fold up the edges of the meat so seal around the cheese.
Use your other fingers to pinch the edges all around, so you seal the cheese inside completely.
Roll the meatball between your hands, to shape it into a perfect ball.
Continue until you have made the full batch.
Meanwhile, in a large saucepan (with lid), heat up olive oil until smoking hot, and carefully place the meatballs in the pot.
Sautée on all sides to brown the meatballs. (TIP: Shake the pan using the handles to release and turn the meatballs. This way they don’t break apart.) You’re not trying to cook the meatballs. Just getting some color and developing flavor.
Lower the heat to LOW, and pour in the marinara.
Cover and cook for 15 minutes.
Meanwhile, steam the zucchini noodles. I do this in the microwave, or you can blanche them in boiling water for 1 minute. You don’t want them to get soft or mushy. You just want to cook off the “raw” flavor.
Serve up the noodles and meatballs, and sprinkle with good parmesan cheese.
