THE BEST KETO CRACKERS

“White Cheddar Cheese-Its”

Baking from scratch can sometimes be intimidating. But this recipe only used a few common ingredients, and produces the tastiest crackers ever! Even your non-Keto friends will love these for your next cheese board! And they are absolutely perfect for snacking! Cut them in to any shape you want, and have the perfect crunchy side for your next meal!

(Note: Macros include 10x 1.5” square crackers or 1/4 of the total batch!)


INGREDIENTS:

  • 3/4 C - Grated Parmesan Cheese (Use the cheap stuff in the green bottle, if you know what I mean!)

  • 1/2 C - Almond Flour

  • 2 TBS - Coconut Flour

  • 2 Eggs - Whites Only

  • 1/8 tsp - Salt

  • 1 TBS - White or Yellow Cheddar Powder (Optional, but so tasty) - Link below to order on Amazon…


DIRECTIONS:

  1. In a large mixing bowl, mix the parmesan, almond and coconut flours, salt, and egg whites until very well combined.

  2. Use your hands to form it into a nice ball of dough.

  3. Place the dough onto a silicon baking mat (or parchment paper).

  4. Press the dough down a bit, and then cover with a sheet of parchment paper.

  5. Use a rolling pin to very evenly spread the dough into a thin sheet. Take your time with this, and work the dough from the center outward, until it covers the entire cookie sheet. You want the entire sheet spread out to 1/8” thick. The more even the better. (TIP: Use the adjustable rolling pin! —Link Below)

  6. Using a pizza or ravioli cutter, cut out your desired shape! I did mine to 1.5” squares, but you can do anything you want!

  7. Poke each cracker with either a chopstick or a fork to prevent bubbling.

  8. Bake at 350F for 20-25 minutes, but keep an eye on it at the end. Your oven will be different than mine, so check it often at the end.

  9. Let cook completely, and then break apart your crackers.

  10. Place in an airtight container immediately once cool.

  11. OPTIONAL: Sprinkle a TBS of cheddar powder (Or any seasoning you like!) and shake the crackers to coat them. This takes them to the next level!

  12. Enjoy!!! Try not to eat them all at once…. ;)
