Time to take a childhood favorite and bring it back to life… but healthier, and even keto-friendly! Saucy, meaty, and totally fun…here is my version of some good ol’ sloppy joes.
The regular, canned sloppy joe mix is actually packed with tons of sugar (which makes it so addicting!) So naturally, this version has a sweet and salty balance that’s both kid- and parent-approved. Keto or not, this is a great budget dinner to feed a hungry family. Feel free to double or triple to please a crowd!

INGREDIENTS:
2 lbs - Ground beef (85/15)
1 ½ tsp - Sea salt
1 tsp - Cracked black pepper
¼ cup - Tomato paste
2 tsp - Garlic powder
1 tsp - Onion powder
2 Tbsp - Sweet paprika
½ tsp - Red pepper flakes
½ cup - No-sugar marinara
1 cup - Beef broth
¼ cup - Allulose (or 3 Tbsp of Swerve, erythritol, or monk fruit)
Optional, to serve: Sliced American cheese, low-carb bread/buns
PRO TIPS:
If you are not keto, feel free to use regular granulated sugar instead of sweetener. If you are keto, I really do recommend Allulose, if you can find it.
In this post, I’m using Aldi Keto-friendly dinner rolls (this is not an ad) that I simply sliced in half to make mini sliders. But I also recommend the bread/buns from Sola brand (this can often be found at Costco) and Chompie’s brand.
Need a higher fat version? Don’t drain the beef fat! Just continue with the recipe, adding in the ingredients for the sauce.
For an EXTRA low-carb version, completely forget about the bread, and just serve this as a low-carb skillet! After the sloppy joe filling is finished, I like to top it with slices of American cheese, then melt the cheese under the broiler for 1 minute. Serve it family-style, with a side salad or use lettuce leaves to make Sloppy Joe Lettuce Wraps.
You can also put a fun little twist on this! Turn this recipe into a Tex-Mex Joe, by adding 1 teaspoon of cumin, and stirring in pickled jalapeños. Honestly, I’d even top it with sour cream and sliced avocado.

DIRECTIONS:
FOR THE BEEF Place a large 12-inch skillet over high heat. To the pan, add in the ground beef and press it flat into one even layer, almost like a giant burger. Let the meat brown for about 2 minutes, or until the bottom gets a golden brown crust. (Note, do not chop up the meat yet. Color equals flavor, so you really want that brown color beforehand.)
Flip the meat over onto the other side, pressing the beef into one even layer again, and let cook for another 2 minutes. Carefully, drain most of the grease from the pan (see PRO TIPS), then put the pan back over high heat. (Note, it’s okay if the meat is not fully cooked through yet.)
FOR THE SAUCE Add in the salt, pepper, and tomato paste, and sauté together for about 2 minutes, breaking up the beef into small pieces. Next, add in the garlic powder, onion powder, paprika, and pepper flakes, and let cook for 30 seconds.
Turn the heat down to medium and stir in the marinara, beef broth, and allulose. Bring everything to a gentle boil, then let it simmer for about 1 minute, or until the sauce thickens slightly. Turn off the heat.
TO SERVE Scoop the sloppy joe filling onto buns, add sliced american cheese (if you’d like), and ENJOY! (see PRO TIPS to turn this into a sloppy joe skillet.)
