The Perfect (Healthier!) Espresso Martini [Sugar-free, Gluten-free]

IT’S FINALLY HERE! I’ve been making this espresso martini at home for myself for months, so finally I turned it into a full recipe! It’s the best of both worlds, espresso to get you movin’ and tequila to get you groovin’! Just be sure to read through all the pro tips (below), as there is lots of extra information that may be helpful to you as you dive into this cocktail.
INGREDIENTS:
2oz - Tequila (reposado), bourbon, or vodka
2 oz - Fresh Espresso -OR- Cold Brew Concentrate, cooled (see PRO TIPS)
¾ oz - Allulose syrup (or simple syrup) (see PRO TIPS)
Optional: 5 dashes - Cocoa bitters

PRO TIPS:
Don’t have espresso? Try this recipe using 2 ounces of cold brew concentrate instead, which is about as rich as espresso! Be sure you are buying the “concentrate”, as regular cold brew may make the cocktail a bit watery in flavor. Find it in the refrigerator section of the grocery store. Optionally, just brew the strongest coffee you can and use that instead.
Be sure you are not adding warm or hot coffee to this cocktail. Let it come to room temperature first.
Use the largest ice cubes you can, as this will reduce the amount of water that melts into the cocktail as you shake it. I have inexpensive silicone ice cube molds I keep in my freezer for cocktails that are a fun way to dress up your at-home bartending!
You can make a quick and easy simple syrup right at home! Just use sugar, or your favorite granulated sweetener. Add 1 part water to 2 parts sugar/sweetener to a pan, and warm it up over medium heat just until the sweetener dissolves into the water. The second its clear and dissolved, take it off the heat, and store it in a jar or squeeze bottle in your fridge for up to a month.
Upgrade your espresso martini with any of these optionally add-ins. Add 1oz of any of the following: Kahlua (or coffee liqueur), Bailey’s (or Irish cream liqueur), or heavy cream (for a creamy version)

DIRECTIONS:
Add ice and water to a martini glass to chill the glass. This step is optional, but helps keep your cocktail nice and cool. Pour out the ice water just before adding the shaken cocktail.
Continue by adding the tequila (or liquor of choice), espresso, allulose/syrup, bitters, and ice to a cocktail shaker. Shake vigorously for about 30 seconds to mix the ingredients and create a dreamy, foamy mixture.
Pour the contents of the shaker into a martini glass through a strainer.
Garnish with three whole coffee beans right on top of the foam. I also added a sprinkle of my homemade pumpkin spice blend! (coming soon)
