Matcha Green Tea Ice Cream [Keto & Sugar-free]

Matcha Green Tea Ice Cream

Not only is Matcha a superfood full of antioxidants, but it’s SUPER tasty! So, I couldn’t think of anything more delicious than turning it into a Keto-friendly, Sugar-free ice cream, perfect for summer!

Trust me, this is a good one, especially if you like green tea and all the gut-health benefits!

I used an Ice Cream maker (Check my Products page for details), as this helps prevent the ice cream from becoming rock hard in the freezer, but its not needed.

INGREDIENTS:

  • 1/2 L - Heavy Whipping Cream

  • 1 Cup - Whole Milk

  • 6 Egg Yolks

  • 100g - Granulated Erythritol

  • 2 tsp - Vanilla Extract

  • 3 TBS - Matcha Powder

  • 1 TBS Vodka (To prevent crystallization)

  • OPTIONAL: Your favorite cookie mix to make Ice Cream Sandwhiches!! I used Keto Candy Girl and it was a hit!

DIRECTIONS:

  1. In a large sauce pan, put the milk, cream, and vanilla, and warm to a very slight boil, stirring often. Do not over-boil.

  2. Meanwhile, in a mixing bowl, add the yolks and the sweetener. Combine well with a whisk, until the color gets lighter.

  3. Once the cream mixture is warm, turn off heat, and add the matcha powder, and whisk well in the pot to combine. Be sure there are no lumps of matcha left. Let rest for 5 minutes to cool slightly.

  4. Now you will “temper” the cream mixture with the yolk mixture. But do this carefully, as you DO NOT want to scramble to yolks. So, carefully drop in a splash of the warm milk, and whisk immediately with the yolks. When mixed, add another splash. Repeat, and so on, until it is all combined.

  5. Place bowl in the fridge, and let fully cool for about 2 hours.

  6. Add vodka. and pour into your ice cream machine, and churn for 30 minutes. If you don’t have an ice cream machine, pour into a heavy container, and freeze, stirring every hour, until set.
